Cucumber Salad


  • 4 large cucumbers
  • 1 cup rice wine vinegar
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbs minced onions (optional)
  1. Peel and rinse the cucumbers, then slice in half lengthwise and remove the seeds with a spoon.
  2. Slice into thin “half moon” sections and place in a large bowl. Add minced onions if desired.
  3. Mix salt, pepper, and vinegar, and pour over cucumbers.
  4. Seal bowl with saran wrap and let steep in the refrigerator overnight.
  5. Serve cold.
