- 4 large cucumbers
- 1 cup rice wine vinegar
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbs minced onions (optional)
- Peel and rinse the cucumbers, then slice in half lengthwise and remove the seeds with a spoon.
- Slice into thin “half moon” sections and place in a large bowl. Add minced onions if desired.
- Mix salt, pepper, and vinegar, and pour over cucumbers.
- Seal bowl with saran wrap and let steep in the refrigerator overnight.
- Serve cold.
