- 5 large russet potatoes, peeled
- 1 tbs butter
- 1/4 tsp salt
- 1/4 tsp black pepper
- Mince the potatoes to the size of large rice grains. This is most easily done with a food processer.
- Mix salt and pepper into potatoes.
- Heat the butter in a large pan. Move it around with a spatula to cover the entire bottom of the pan.
- Add the potatoes, making sure to spread them out over the bottom of the pan.
- Cook, turning frequently, until crispy and golden brown.
